Kabuse

Kabuse is a shade tea like Gyokuro. The plantations from which it is obtained are covered thanks to cloths that keep the plants in shade for the last 7-10 days before harvest. A shorter shading time than Gyokuro, but one that causes a decrease in the catechin content present in the leaves, thus dramatically reducing the 'astringency and bitterness typical of some green teas. A delight for the palate, free of withdrawal and with a pleasant umami taste, enhanced by the shading of the leaves.
