In Anxi in Fujian, the best Tie Guan Yin has been produced for more than a thousand years. It is the best known of the Chinese wulong teas and the one most suitable for Gong Fu Cha preparation. This autumn crop, the best for this type of tea, has an oxidation level around 15 percent and offers heady floral notes (magnolia, lily of the valley, wisteria, orchid).
