DESCRIPTION

A distinct white tea with influences from the process normally used with green tea. The tea has a refreshing taste and the typical ‘Yunnan character’. The tea is from April and consists of a young leaf and top.

At the plantation where this Snow Dragon comes from, there are large differences in temperature during the day and night. It is also very foggy, as much as about 150 days a year. These conditions ensure that the leaves of the plant are rich in substances that provide the health value and taste of the tea.

The tea is made as follows:

  1. Freshly picked leaves are spread out on bamboo baskets and turned over every hour. The temperature is 25c and direct sunlight is avoided on the leaves. The wilting process takes 2-6 hours and depends on the weather and the quality of the leaf.
  2. The leaf is heated to 120-130c for 1.5-2 minutes to stop oxidation, to a moisture content of 60%. This is not something normally done with white tea but the next step is rolling where the leaf is damaged. When enzymes are still active then you would get too much oxidation and make a black tea. Then again, the heat is limited enough to preserve the white hairs.
  3. After a short time of cooling, the leaf is rolled with a machine. This takes about 15-20 minutes with a pressure that takes into account the firmness of the picked leaf. It is ready when the moisture in the leaf causes it to stick a little when you hold the leaf.
  4. The leaf is now dried around 120-130c for 10-15 minutes until the leaf has a moisture content of 15-20%.
  5. The leaf is given a short time to cool after this, about 4 hours or so.
  6. Then the leaf is roasted again to enhance the aroma at a temperature of 90-100c and ends when a moisture content of 6-7% is reached.
  7. After this, the tea is ready and can be shipped.
