DESCRIPTION

Moonlight White is made in Yunnan from a specific cultivar of the tea plant, the Jinggu big white leaf. When wilting, the back of the leaf turns dark but the front and tips remain light in color. This gives the beautiful specific black and white color. The tea is flavorful and somewhat sweet.

Moonlight White is made near Jinggu (small town and river) in Yunnan. The tea is made from the Jinggu Da Ye (big leaf) cultivar. The leaf is picked in the morning and then wilted inside. This inside so without sunlight, symbolizes "drying under the moon.

The wilting takes about 3 days (around 30c and with a humidity of 50%) during which the back of the leaf darkens but the front and the tops remain light in color. This gives the beautiful specific black/white color. Warm air is used to dry the tea.

Because of this long wilting, there is also some oxidation and therefore the taste sometimes looks a bit like a black tea. The tea is flavorful and somewhat sweet.
