White Phoenix organic

A beautiful white tea from Yunnan. Actually a better quality White Peony. The leaf is better quality and picked earlier. The tea consists of young leaves and many needles. The leaf has wilted/dried for a longer time which makes the taste a bit fuller than the somewhat fresher and sharper White Peony’s from Fujian.

A white tea is picked and dried. The first stage in drying is wilting. This can happen quickly or a little more slowly. Nowadays, drying is done in a fast way to keep the tea green in color. The taste is then somewhat sharp and "young. Traditionally, white tea is wilted more slowly and the leaves oxidize slightly. This gives a fuller and sweeter taste. This White Phoenix is dried in the traditional way.
