'Honey' Jin jun mei 2023
The Chen family has several small tea gardens in the Feng Shui guang area. It is located at the junction of Fujian Province and Jiangxi Province, with a maximum altitude of more than 1,000 metres, shrouded in mist for most of the year. The average temperature in summer is 25C. In winter, the tea garden is often subject to mild frost.
This Honey Jin Jun Mei is made from the Fuyun No.6 tea plant variety, which is also favoured for its fuzzy buds that turn into golden strands after processing. This is the earliest batch in Mrs. Chen's family, every year, and is also the best base for their honey-style Jin jun mei tea.
Sweet, refined red tea with a honey aroma, long to steep, and very nice on summer afternoons when it's a little cooler, or in rainy weather. Whether you choose a western tea making style or a kungfu tea making style, it will do well with both.
We recommend making 4.5 - 5 grams of tea leaves in 100-120 ml gaiwan, with short infusions. The temperature of the water should be around 85-90 degrees. Do not wake the red tea, as the first infusion is the one that contains the most vitamins, which are extracted from the inside of the leaves during the long rolling process.
