Bai Mu Dan 2022 白牡丹

The meaning of the tea name: White peony - Bai Mu dan (白牡丹)

Harvested on 14 April 2022, this refreshing white tea is a light, fragrant variety.

Scented with fresh flowers and a peachy, ripe summer apple zest. Long infusion and sweet, which doesn't turn sour or bitter after a long steep.

Ideal as a start to warmer days, but also a refreshing way to brighten cooler evenings. It's an elegant and pure drink, worth trying for everyone, even for those who prefer a stronger, more characterful tea.

Bai mu dan is a white tea with both buds and leaves, which does not undergo a rolling process. The leaves are dried and not rolled. It gradually releases its aromas, which are really honeyed and cypressy. The colour of the infusion is quite pale, vanilla yellow, almost white :-)

Making Bai Mu dan White Tea

It is recommended that you put 5-7 gr tea leaves in a glass pot of about 180-200 ml or a white porcelain tea making utensil and after a quick wake up, taste the tea in 30-60 second infusions. The temperature of the water should be around 90 degrees and then gradually increase as you progress with the infusions.

Bai mu dan tea can also be made cold brew, the recipe for which is to put 8 grams of tea leaves in 1 litre of water and leave in the fridge for 1 night.
