A rich and exciting tea, surprisingly long-lasting, a favourite of many. The taste definitely reminds us of Japanese greens. It has a distinct chestnut aroma and is a refreshing treat.

Ms. Chen and his family have been growing and making tea for generations.
Most of our white teas, Wuyi-oolongs, are a tribute to the handiwork of his family. Ms. Chen is from Wuyishan, the home of the rock oolong. Her husband and family are from Mount Phoenix, where they make majestic dancong oolongs. And her godmother makes white teas and this wonderful green tea in Zhenghe - Fujian province.
This variety has typically been used to make white tea. However, a year or two ago, partly in response to our request, they started making green tea, and this year it has been particularly good.
Thanks to the variety used, it is much more tolerant of hands that are new to tea making - it is hard to go wrong.
For the summer, white tea can also be a good choice to cool the body alongside green teas.

To make it, use soft water and the temperature can be safely between 75-85 degrees. 5 g tea - 250 ml water - 1 minute steeping will give you an ideal refreshing and invigorating green tea.
