Method of preparation:fill the calabaza/mate 3/4 full, cap it with the palm of your hand, then shake it while holding it down tightly. Once this is done, the Yerba will tilt slightly, at which point you need to pour a little lukewarm water into the little "unevenness" that has been created, so as to moisten it slightly and let it sit for a couple of minutes. Next you can start pouring, still in the previous wet spot, minimally mineralized water at 70/80 °C, being careful not to wet all the Yerba Mate present in the mate. After that all that's left is to introduce the bombilla and start enjoying your Mate.

Aguamate Organica - Yerba Mate BIO

Aguamate Organica - Yerba Mate BIO has all the organic and fair trade certifications imaginable. It is made in Argentina from local Yerba Mate, but the company's foreign agent is based in New Zealand, so it arrives here in Italy after making its way around the World. Aguamate, indeed, is a New Zealand brand that sells exclusively BIO Mate. In all likelihood it is a Yerba produced under license by the excellent Argentine Yerba Mate producer Kraus, one of the best and among our favorites in the South American market. With Kraus products, Aguamate shares a very high quality profile and the total absence of smoky notes, a preponderant characteristic of Kraus Yerba.

Despite some similarities such as those just mentioned, it must be said that the flavor of Aguamate is not at all similar to that of Kraus Yerba Mate. Aguamate has a very strong character that characterizes BIO Mates, a green, powerful, bitter character but culminating finally in a pleasant sweet aftertaste. A unique Yerba with a special flavor that is hard to find in other Yerba Mate. If we really want to draw a parallel it probably resembles Yerba Kurupí a bit.
