Ali Shan oolong has been described as the Champagne among oolongs
This tea is complex, floral, slightly sweet and has a long after taste. Alishan tea is usually made from one of two cultivars, Jiaxuan (milky, creamy) or Qingxin (sweeter, fresher, more floral). The tea is roasted very lightly.
The term Alishan is misleading because it is not 1 mountain but a mountainous area in central Taiwan with some 25 peaks of about 2,000m high. The highest mountain is called Datashan (2663m)
This region is known for its dense cloud cover and beautiful mountain peaks. Lots of cypress trees, cherry trees, an abundance of birds and wildlife.... This is one of Taiwan's most famous tea regions, known for Gao Shans, high mountain tea varieties. Because the tea grows high, it grows slowly and develops a higher concentration of juice and essential oil, to which it owes its layered, complex flavor.
