Of all the teas, white tea is the variety that has the least amount of processing. During the picking one is extremely careful not to damage the buds, the first offshoots. Arriving at the factory, they wilt a bit in the sun before being dried. The leaves are not rolled and therefore virtually do not oxidize. All the beautiful flavors remain inside the leaf.
The character of this tea is subtle with beautiful flavors of honey, flowers, fresh walnuts and newly cut grass. Together they form sweet nuances and a silky smooth tea.
To draw the beautiful flavors from these leafy nodes you will need hot water. So feel free to use boiling water!
