Little yellow tea is produced in China. This is because it is a process that takes a lot of time. Yellow tea has an extra production step after making green tea.
The green tea is wrapped wet in cloths and placed on a heat source before rolling. This ensures that the tea does not undergo an oxidation process.
The heat causes the polyphenols in the tea to be sealed by a chemical process, creating a much milder, fruitier and slightly spicy tea.
The tea also turns more toward yellow instead of black. The process is closely monitored by the teamaster to get the optimal taste.
