Did you notice that some of the leaves are still a bit oxidized? That is because these leaves have wilted for as much as 2 to 3 days after shaking (tossing) which sets off oxidation. Most of it gets knocked off but not completely. The partial oxidation ultimately gives the beautiful sweetness to the tea.
