Haru Honoka - Hoshino Seichaen春ほのか
The new Haru Honaka - Hoshino Seichaen is a pop tea, or cult tea, the brainchild of Hoshitea's tea master, the premium-winning Shinya Yamaguchi (one of the Yamaguchi brothers who run Hoshitea), and their goal is precisely what makes us love tea: to bring nature and health, the scent of spring, into our homes. Haru Honoka (Touch of Spring) is a unique blend of Fukamushi Sencha and Tencha.
As we have talked about it many times, there are no competitions for Matcha, the teas are measured, tasted and graded according to Tencha, which then becomes (in most cases) Matcha. Not many companies own Tencha, only those that are seriously involved in the production of authentic Matcha.
This is not a bold, deep green umami dip, but a refreshing, smooth, light tea. In our opinion it is similar to Japan's Shirahime white tea, also by Hoshino Seichaen.
For quantities of less than 80 g you will receive Haru Honoka - Hoshino Seichaen in hermetically resealable and 100% recyclable Doypack bags.
Fukamushi Sencha
Tencha
It comes from the pristine Hoshino Village in Yame, Fukuoka, Japan. The company has been committed since the 1950s to ensuring that its plantations, cultivation and labor standards, as well as tea processing facilities, stand out for efficiency and quality. Hoshino Seichaen specializes in producing Matcha, Gyokuro and Sencha tea of the highest quality. Then again, in addition to the skill and craftsmanship of the tea makers, there is also an area incredibly suited for growing green tea to lend a not inconsiderable hand. It is produced in limited quantities with an almost maniacal focus on the quality profile.
Preparation
Use 7-8 grams of the product and minimally mineralized water, with a fixed residue of no more than 50 mg/l, at 70 °C and a preheated teapot of small volume (150-250 ml).
Prepare 1-minute infusions, three of which will give you richly flavored infusions, while the subsequent ones will be milder and sweeter. As the infusions go on, use warmer and warmer water until you reach a temperature of 90-95°C.
The first two infusions will give a tea with an intense but at the same time delicate flavor, with subsequent infusions the tea will inevitably lose its intensity but reveal its sweet character.
After opening and use, store tightly closed in the refrigerator at 5°C.
