This accessory is very useful for measuring the temperature of the water you use to brew tea. In fact, in order to best appreciate the characteristics of a tea, it is essential to infuse the leaves at the temperature indicated for each category.

This is particularly valid for green teas, which should be infused at 70-85 °C, and white teas, which should be infused at 80-85 °C. If, for example, we infuse a green tea with boiling water, a bitter taste will result because the extraction of the compounds was too rapid. For black teas and tisanas, on the other hand, water at 90-100 °C is usually used.
