Matcha takes the form of a very fine powder colored jade green that is obtained by grinding slowlyto stone dried tea leaves, from which the central vein has first been removed. In fact, the term "matcha" can be translated from Japanese as "ground tea."
This ceremonial matcha, obtained from plants shaded for 21 days, is ideal for preparation according to the Japanese tea ceremony, using the traditional bamboo whisk (chasen) and wide-base bowl (chawan). To avoid the formation of lumps, it is helpful to sift the matcha powder before pouring it into the bowl. For hot preparation, use water at 80-85°C.
