Pu Erh Yunnan is a post-fermented tea that is, it has undergone processing that involves maturing and fermentation. Considered by the Chinese and others to be the elixir of long life because of its known beneficial properties, pu erh has different characteristics and qualities from all other teas, in that the leaves, after the various procedures of harvesting (usually leaves from mature trees are used), withering, stabilizing and drying are moistened (or soaked) and then stored in humid environments , time in which they undergo a process of bacterial fermentation, which gives the tea its characteristic "damp wood" aroma. The pu erh boasts of very many variations, which differ in origin, method of humidification, aging and fermentation time (sometimes they are left to rest for as long as 50-60 years!) Differentiating itself from all other teas encompasses a multitude of sensory nuances that make this tea a true specialty, a kind of "lived-in" tea. The pu erh due to its cleansing action is often associated with purifying and diminishing diets,in fact it acts on liver metabolism by helping lower fat assimilation in the body.
