DESCRIPTION
Ginger is a herbaceous plant native to Southeast Asia, but it grows in all tropical countries, including India, Brazil, Peru, and now in Italy. The part used is the rhizome, cleaned and stripped of its rootlets; it is commercially available fresh, dried in pieces or powdered, candied, and pickled. It has a fresh, pungent flavor, with citrus notes reminiscent of lemon.
It has been among the most widely used oriental spices in the West since the Middle Ages, where it was already appreciated as a medicine and as a culinary ingredient. In the East it is used extensively, combined with numerous dishes or as a healing remedy in traditional medicines. It is an important ingredient in many types of Indian and Thai curries. In Europe it has been used for centuries to flavor desserts and in the preparation of drinks and aperitifs (Ginger and Ginger Ale). It is the base for the famous Gingerbread, cookies made with the Gingerbread mixture.
Use: Ginger in pieces is ideal for flavoring infusions and teas, or for refreshing drinks. It can also be used in cooking in numerous recipes; when cooked, the pieces will remain soft and pleasant.
