The best variety of gyokuro from the renowned "gyokuro guru" Master Sakamoto. Very likely the best gyokuro on the planet.

Hand picking and hand crafting is very rare in Japan and contributes in no small part to the price of this gem. In fact, there are two things to note about the price:




  1. Everyone who has tasted Gyokuro Tezumi has acknowledged that the price matches the quality.
  2. We live in happy times. Not so long ago, the idea that a tea of this quality would reach people without noble backgrounds and power was absurd.

If sipping Kiwami could be likened to touching Heaven, then sipping Tezumi is at the very least an expedition to the centre of our Galaxy.

Farmer:

Master Sakamoto has been growing organic gyokuro since 1985. He is a renowned expert in Japan, rightly nicknamed the 'gyokuro guru' for his vast knowledge and achievements. His teas, at any time, disprove the claim that you cannot grow good gyokuro without artificial fertilizers. Among other things, he has invented and produces his own kind of organic fertilizer, promotes organic farming and tries to help farmers who want to switch to it. His whole approach is based on a holistic view of soil, plants and human beings as part of a whole.

Preparation

Perfect for shibori-dashi

50 ml / 6g thermometer_w 35 °Cstopwatch 120 / 5 / 10 / 15 / 25 sec




For preparation in shibori-dashi, we traditionally use 6g of tea per 30-50ml of water.

1. Infusion:

Pour in water at 35°C After two minutes of infusion, skim off every last drop.

2. Pour the infusion with water of the same temperature and immediately pour off.

3. And pour the next infusion (+-7) with progressively warmer water, extending the infusion time until you are among the immortals.
