New for 2023 - Karigane from the Seimei cultivar.


The name Karigane - "Cry of the Wild Goose" - is an old name, originally from Kyoto, used for the finest varieties of kukicha made from shaded teas. The name came about through observation of nature.

Wild geese, in fact, sometimes land on pieces of wood carried by the river to rest during their migration.... And the dangling stems of the carigane resemble pieces of floating wood.


A delicious gyokuro with a sweet and creamy taste, lower in caffeine and all the more rich in L-theanine. Ideal for when you crave maximum relaxation without losing focus.


Karigane is made from gyokuro tea stalks, it can vary in quality depending on which cut it comes from, our Karigane is from the first best cut.

Compared to other gyokuro, karigane has a significantly lower tein content, with a high L-Theanine content.

Farmer:

Master Sakamoto has been growing organic gyokuro since 1985. He is a renowned expert in Japan, rightly nicknamed the 'gyokuro guru' for his vast knowledge and achievements. His teas, at any time, disprove the claim that you cannot grow good gyokuro without artificial fertilizers. Among other things, he has invented and produces his own kind of organic fertilizer, promotes organic farming and tries to help farmers who want to switch to it. His whole approach is based on a holistic view of soil, plants and human beings as part of a whole.

Preparation

Traditionally, we use 7g of tea per 50-100ml of water.

1. Infusion. Pour the infusion with water of the same temperature and immediately pour off.

3. Pour the next infusions gradually with warmer water, extending the infusion time until you are among the immortals.


I recommend using soft filtered water.

Increasing the temperature will result in a thinner tea and more kukicha notes will begin to emerge in the taste. Feel free to play around with the amount of tea as well - the better the tea, the stronger the infusion can be made without taste defects.
