DESCRIPTION

The Golden Yunnan Special Grade Organic Red (Black) Tea is made entirely of small buds from assamica camellia trees in Yunnan.

Careful selection in harvesting allows for a product that is unique and able to meet even the tastes of those who are not used to drinking red teas because of their tannic character.

The appearance of Golden Yunnan may be somewhat reminiscent of that of some Yin Zhen white teas, but the golden color of these gems indicates that the product has been totally oxidized with some skill.

Thanks to the care taken in the processing and harvest chosen, in fact, Golden Yunnan Special Grade Organic Red (Black) Tea does not express in the cup the typical characteristics of oxidation but instead retains a slight vegetal tone.

On the palate, the infusion also shows an aromatic floral part before conquering the whole mouth with its sweet taste that, again because of the vegetal presence, will remind some of sugarcane.

In the aftertaste, it is finally possible to feel the oxidative trace in the form of a taste somewhat reminiscent of raw cocoa and which leaves, at the end of tasting, a pleasant soft and warm sensation on the palate.

Because of the similarity of this tea with the aforementioned Yin Zhen, we invite you to taste our Yunnan Silver Needle White Tea so as to delve deeper into the effect of oxidation on the young camellia leaves.

Production

After harvesting, the leaves of Golden Yunnan Special Grade Organic Red (Black) Tea are left to wither in the sun according to the timings arranged by the manufacturer before moving on to the folding stage.

At this stage of processing, the product undergoes mechanical and manual handling that allows the juices within the leaf to be stirred.

From here begins a constant oxidative process that can best be managed by placing the product in temperature-controlled environments. Once the leaf reaches its typical brown color, the residual moisture in the plant mass is removed with jets of hot air.

After a few days of rest, the tea is ready to be consumed.

Infusion Method of Organic Golden Yunnan Special Grade Red (Black) Tea

We strongly recommend infusing Organic Golden Yunnan Special Grade Red (Black) Tea in the traditional Chinese method (Gong Fu Cha) with a Gaiwan with a capacity of about 100 ml. By following this preparation, with 5 grams of leaves, multiple infusions can be made that are useful for best tasting all the flavors of the tea.

After a quick rinse of the leaves with water at a temperature of 90°C, an initial infusion of 10 seconds can be made, and then, keeping the water at the same temperature, the product can be continued to be exploited by adding more to water and increasing the previous infusion time by about 5 seconds (10 - 15 - 20...).

For a more traditional preparation in the Western style, we recommend 3 grams of leaves (about 2 teaspoons) in a 150 ml cup with water at 90°C for an infusion time of one and a half minutes.

For a better tasting experience, we suggest that you strain the infusion as soon as the established steeping time is over. The infusion timings we suggest, however, can also be slightly modified to your liking to achieve a more or less intense taste.

We recommend storing in a cool, dry place away from direct sunlight.
