The Honey Fairyland 1st Grade Organic Yellow Tea is a truly distinctive yellow tea with a wide and unique aromatic range. In fact, it presents sweet notes of honey, but also pleasantly citrusy and floral hints, remaining very smooth on the palate. This organic tea comes from Mt. Jingmai, in the famous autonomous province of Puer, Yunnan.
Tasting - Sight and Smell
Honey Fairyland yellow tea leaves are finely crafted, thin and slightly curled, with brown tones and a multitude of golden buds. Once infused, sweet and fruity aromas reminiscent of peaches in syrup, hints of honey, cocoa, fragrant wood and puff pastry are perceived on the nose. In the cup, the liqueur is a magnificent color between golden and amber and has a body of good density and smoothness without astringency.
Tasting Notes
GONG FU CHA
The first infusion of Honey Fairyland yellow tea brings with it sweet notes of honey and hints of ripe yellow fruit. Even in the delicacy of this first infusion, citrus notes reminiscent of lemon and bergamot, but devoid of any acidity, can be distinctly perceived. The second infusion brings out a stronger body and notes of orange honey, accompanied by hints of wild flowers and orange blossom. A slight vegetal note also appears briefly on the finish. With the third infusion, this yellow tea reveals all its uniqueness: in addition to honey, hints of fragrant wood are indeed perceived and notes of bergamot intensify. On the finish, the floral notes remain, giving a pleasant sensation of freshness to the palate.
TO THE WEST
At a first sip of Honey Fairyland yellow tea, one realizes how far this tea is from the classic flavors one would expect to find in a yellow tea: in addition to the more typical sweet notes of orange blossom honey, floral notes appear, combining beautifully with citrusy hints of cedar and bergamot. The evolution on the palate leads, sip after sip, to perceived notes of cocoa and scented wood, up to spicy tips reminiscent of white pepper. A vast aromatic range, with a long, floral and citrusy persistence.

Preparation
We strongly recommend infusing the Honey Fairyland Yellow Tea in the traditional Chinese method (gong fu cha) to enjoy these leaves at their best. Following this preparation, 4 grams of leaves (about 3 teaspoons) can be used in a gaiwan of about 100 ml to obtain multiple infusions with different tastes.
After a quick rinse of the leaves in water at 95°C, an initial infusion of 30 seconds can be made, and after that, keeping the water at the same temperature, up to 4 infusions can be made.
For a classic preparation according to the Western style, we recommend 5 grams of leaves (about 2 teaspoons) in a 250 ml cup with water at 95°C for an infusion time of 2-3min.
The tea can be filtered for ease when tasting and also the infusion times given here above are meant to be purely indicative so you can also adjust according to your personal taste.
