DESCRIPTION

The Yunnan Old Bush Organic Red (Black) Tea comes from Puer in China's Yunnan Province and originates from the historic Yunnan Big Leaf cultivar. It has been grown according to the principles of Organic Farming, which makes it a product with exceptional organoleptic qualities. It is a complex and well-balanced tea that caresses the palate like velvet and envelops with its fruity, spicy and sweet notes.

Tasting - Sight and Smell

Yunnan Old Bush Organic Red Tea has very tapered and thin, rolled-shaped whole leaves. The color is a lustrous charcoal gray with lots of golden buds. On the nose, the infused leaves release aromas of malt, wood (with a slight smoky note), sweet fruits such as dates and raisins, and a floral finish that has hints of rose. The liquor is dark orange in color with bright amber highlights.

Tasting Notes

GONG FU CHA

The first infusion of Yunnan Old Bush organic red tea carries fruity notes: on the palate, hints of red fruit compote, winter baked fruit (apples) and baked plums are perceived. A hint of dry wood and an interesting peppery note also emerge, anticipating a floral finish. The second brew presents a very intense spicy note in the opening, traceable to a mix of black pepper and white pepper. Malt, baked apple and a slight empyreumatic note then appear, accompanying the woody hints. With the third and subsequent brews, the floral hint of rose stands out before all others, followed by spicy notes and a sweetness of baked plum at the close that softly envelops the palate.

TO THE WEST

Yunnan Old Bush Organic Red Tea opens with a hint of bitter cocoa, followed by malty and woody scents. Spicy notes of pepper and nutmeg and fruity notes of baked apples and plum syrup are then noticeable. The slight bitterness at the end is well balanced by the sweetness of the fruit notes, which linger for a long time along with the pepper notes. A tea with a dense and velvety body, very soft on the palate.

Infusion time of Yunnan Old Bush Organic Red (Black) Tea

We strongly recommend infusing Yunnan Old Bush tea by the traditional Chinese method (gong fu cha) to enjoy these leaves at their best. Following this preparation, 7 grams of leaves (about 3 teaspoons) can be used in a gaiwan of about 180 ml to obtain multiple infusions with different tastes. After a quick rinse of the leaves in water at 95°C, a first infusion of 10 seconds can be made, and after that, keeping the water at the same temperature, the time can be increased each time by 10 seconds from the previous infusion (10 - 20 - 30...).

This tea has a longevity of about 7 infusions.

For a classic preparation according to the Western style we recommend 3 grams of leaves (about 2 teaspoons) in a 150 ml cup with water at 95°C for an infusion time of one and a half minutes.
The tea can be filtered for ease when tasting and also the infusion times given above here are meant to be purely indicative so you can also adjust according to your personal taste.

We recommend when tasting to try to let the tea rest in the cup for about a minute before drinking it so you can better feel the sweetness of it.
