Simao Organic Puer Sheng Tea Cake has a fresh, smooth and intense aroma and a slightly astringent taste but well balanced by sweet notes. In the cup, this tea has a deep yellow color and silky body. This organic tea comes from Zhengwan village, in the famous Puer Autonomous Province.
Tasting - Sight and Smell
Simao's organic puer sheng tea has medium to large leaves with various shades of brown and chestnut and many silvery-white buds. The infusion is very aromatic: there are notes of cooked fruit, frankincense, myrrh, camphor and burnt wood. The liqueur in the cup is golden yellow with pinkish highlights, has a silky body and has a slight astringency on the finish.
Tasting Notes
GONG FU CHA
The first infusion of Simao's organic puer sheng tea is characterized by notes of incense and firewood, which are followed by sweeter hints of fruit, such as cooked apple or yellow apple. With the second infusion, the fruity notes become more pronounced and sour hints appear that are very well balanced with the sweet hints. Astringency, although noticeable, is minimal and not disturbing. The third infusion and the following ones result in a softer and sweeter liquor, with camphorated notes on the close.
TO THE WEST
A first sip of Simao organic puer sheng tea reveals empyreumatic notes of ash and burnt wood, followed by notes of incense that leave a good sensation of freshness on the palate. The sweetness is well balanced by mild astringency: there are notes of strawberry tree honey and fruity hints of green apple, with a mild and pleasant acidity. Persistence is balsamic: hints of incense return with camphorated hints that linger long on the tongue.

Preparation
We strongly recommend infusing simao organic puer sheng tea in the traditional Chinese method (gong fu cha) to best enjoy these leaves. Following this preparation, 4 grams of leaves (about 3 teaspoons) can be used in a gaiwan of about 100 ml to make several infusions with different tastes. After a quick rinse of the leaves in water at 100°C, one can proceed with an initial infusion of 10 seconds and, after that, keeping the water at the same temperature, proceed with multiple infusions increasing the time each time by 5 seconds (10 - 15 - 20 ...)
This tea has a longevity of about 5 infusions.
For a classic preparation according to the Western style we recommend 2 grams of leaves (about 1 teaspoon) in a 150 ml cup with water at 100°C for an infusion time of one and a half minutes.
The tea can be filtered for ease at the time of tasting and also the infusion times given above here are meant to be purely indicative so you can also adjust according to your personal taste.
