Serving tea in a glass pitcher before serving it in cups is an important step in Chinese Tea Ceremony, because it allows for a liquid of uniform color and flavor.
The glass pitcher in fact is also known as the gong dao bei (cup of equity).
What is the Gong Dao Bei
The Gong Dao Bei is simply a pitcher for serving tea so that everyone gets an equal amount of infusion (that is why it is called the equity cup). If it were to be served directly from a teapot or gaiwan, the first cup would have a weaker infusion than the last. Gong Dao Bei allows tea to be strained from the teapot or gaiwan into this pitcher to equalize the infusion so that everyone can taste the same tea.
