DESCRIPTION

The Fairy White Tea is a product selected from the strongest and oldest wild tea plants scattered in the highest mountains of Vietnam. This gives this white tea a fresh, delicate and sweet flavor like a gift from spring. According to legend, only the fairies of heaven knew the wild lands of tea, and in springtime they could gather the buds of tea trees on the highest mountains.

Tasting - Sight and Smell

Fairy white tea is composed of buds covered with a soft, lustrous layer of bai hao that makes them look like velvet. The color is a mixture of light brown, antique pink and silver. The presence of a few sturdy stems is noticeable. Once infused, the shoots give off notes of honey, dry wood and hay, with a floral finish. The liquor in the cup is a very clear, almost transparent yellow, very clear and bright.

Tasting Notes

GONG FU CHA
The first infusion of Fairy white tea has delicate hints of honey, apricot and young wood, with a fleeting floral note on the finish. With the second infusion, a fruity yet sugary note emerges, reminiscent of an apple pastry covered in powdered sugar. The floral note has gained more character and now veers into a potpourri-like hint. With the third and following infusions, the fruity characters are accentuated, with notes of raisins and pear compote accompanied by a hint of sandalwood. The body is of medium density, silky on the palate. The texture is sweet and fragrant, long-lasting.

Preparation

We strongly recommend infusing this tea in the traditional Chinese method (Gong Fu Cha) with a gaiwan with a capacity of about 150 ml. Following this preparation, multiple infusions can be made with 5 grams of leaves that are useful to best capture all the flavor nuances of the tea.

Heat the water to a temperature of 85°C and proceed to an initial infusion of 40 seconds. Keeping the water at the same temperature, you can then continue to exploit the same leaves by adding more water and increasing the infusion time by 10 seconds each time (40 - 50 - 60...).

This tea has a longevity of 6-8 infusions.

For a more classic preparation in the Western style, we recommend 3 grams of leaves (about 2 teaspoons) in a 200 ml cup with water at 85°C for an infusion time of 3 minutes.

For a better tasting experience, we suggest that you strain the infusion as soon as the infusion time is over. Our suggested infusion times, however, can also be slightly modified to your liking to achieve a more or less intense taste.

We recommend storing in a cool, dry place away from direct sunlight.
