What is Chinese Oolong tea or blue tea?

Oolong tea, also known as blue tea or Wulong tea, is a semi-fermented tea native to China. Its short fermentation time places it halfway between green and black tea, both in terms of taste and benefits. Its literal translation, meaning "black dragon", plunges us into the world of Chinese legends.

To justify the discovery of its semi-oxidation, we'll tell you the story of a peasant who interrupted his picking to go hunting and cook his game, and found his undried tea that had begun its oxidation. How is Oolong tea made?
