    The best matcha made in Japan is our ceremonial A grade matcha.

    The expert hands of our farmers carefully and selectively pick each leaf for our product. Most tea leaves are now machine-trimmed and therefore traditional hand-picked Matcha is very rare and expensive. Compared to machine-trimmed tea, the flavor and aroma of hand-picked tea are significantly milder and softer.

    The distinctive delicate and deep flavor is provided by the rich soil.
    The "Tana" method is used to carefully shade our Mr. MATCHA Ceremonial A grade for three weeks before harvest. Artificially shading their fields allows them to mimic nature and gives matcha a smooth, umami-rich flavor without having to move the tea bushes.

    There are two reasons to limit sunlight:
    When tea is grown in the sun, the powerful antioxidant catechins (also called EGCG or epigallocatechin gallate) concentrate. Catechins have an unpleasant taste.

    Restricting photosynthesis, which normally turns the amino acid L-theanine into catechins, instead stimulates the amino acid, which has a sweet taste profile that you can taste, to balance matcha and achieve umami.

    Shaded tea retains more of its numerous nutrients in the leaf and develops a nice, harmonious flavor profile between the bitter catechins and sweet L-theanine.

    Traditionally, a screen of densely packed bamboo reeds was used to cover the plants. This is extremely difficult to come across these days. Although deploying shade tarps can cost up to a million dollars, Tana - curtains stretched by metal poles over the fields - are now most commonly seen.
