DESCRIPTION
Yellow tea differs from better-known tea varieties such as black teas, green teas, and white teas. The processing method is similar to that of green tea, adding the "yellowing" stage. The leaves are subjected to rapid heating that inhibits the enzymes responsible for oxidation. Thus heated they are wrapped in cloths and left to dry for a few hours. The heating and drying process is repeated several times until the leaves achieve the desired appearance, color and aroma.
The color of the leaves is light green with silvery highlights, the infusion straw yellow. The flavor of this Yunnan yellow tea is of incomparable sweetness with very fresh aftertaste.
