Thee van Sander
DESCRIPTION

This is a very good quality Anji Bai Cha from Charlie's high plantation. The tea is slightly grassy and sweet but well brewed not bitter. The high mountain plantation is at about’900 meters altitude and the tea has been tested to EU standards since 2017. Charlie, with his father, has been running a low and high mountain plantation specializing in Anji Bai Cha since 1999. Of this tea, 90% stays in China and a little goes to Russia, other countries in Asia, the UK and since 3 years to Sander's Tea.

Please compare with a first pick (pre-qingming) very highest quality Anji Bai Cha from Charlie's low mountain plantation. Which do you think tastes better, an early pick from low elevation or a slightly later pick from high elevation?"

'Bai Cha' means 'white tea,' but the Anji is indeed a green tea. 'Bai Cha' in this case refers to the cultivar whose buds and young leaves are very light in color. The leaves produce less chlorophyll due to the cold conditions of the district, only in May when it gets warmer do you see the leaves turn greener. After pulling the tea leaf a few times you will see the leaves become lighter and lighter.

After harvesting, the tea is roasted to prevent oxidation and before drying, the leaves are formed in a machine:

Charlie's plantation

Charlie's father started 2 plantations in 1999. A 13-hectare plantation at an altitude of 900 meters and a 5-hectare plantation on low mountains. Anji tea is made on both but they differ greatly in quality and taste.

In between harvesting, people work on the plantation to clean up, do chores, fertilize the soil and remove weeds. The latter is done mechanically, his high mountain tea has been EU-compliant for years (tested by Eurofins). Fertilizing is done with organic fertilizer and horse and drone!
